Friday fever. Homemade hamburgers over hot coals. If you want to improve your knife skills, finally chop up some picanha rump/ tri-tip. If not, get some nice mince/ ground beef. Either way, aim for a 80/20 meat to fat ratio. Either way, grate in a good chunk of salted butter. Freeze the butter, then grate it. Do it. Thank me later. Happy Friday, everyone

Holiday celebrations with good friends and good food. Korean BBQ. Fresh leaves, grilled pork, dak-galbi, homemade kimchi and about 15 side dishes. No one mouthful tasted the same as another. The food prep is worth it - this is one of the best meals I've ever eaten.

Easter Oxtail. Loads of veg, wild rosemary, roast garlic, beef stock. Lots of chopping = happy knife maker. 5 hours at 150 degrees C. Easter eggs for dessert.

You can stay as you are for the rest of your life, or you can make your peace with brussel sprouts. Lots of bacon, olive oil, salt, pepper and sage and rosemary from the garden. Roast till you see a million caramelised edges in the pan. Have a great week, everybody.
