Holiday celebrations with good friends and good food. Korean BBQ. Fresh leaves, grilled pork, dak-galbi, homemade kimchi and about 15 side dishes. No one mouthful tasted the same as another. The food prep is worth it - this is one of the best meals I've ever eaten.

Easter Oxtail. Loads of veg, wild rosemary, roast garlic, beef stock. Lots of chopping = happy knife maker. 5 hours at 150 degrees C. Easter eggs for dessert.

You can stay as you are for the rest of your life, or you can make your peace with brussel sprouts. Lots of bacon, olive oil, salt, pepper and sage and rosemary from the garden. Roast till you see a million caramelised edges in the pan. Have a great week, everybody.

It's all in the details. Shot across the spine of one of the chef knives in our last post. Filed spine, black liner, red liner, brass liner and black G10. We don't get tired of making knives, especially when they turn out like this.

Back to the future. 6 years ago we made our first knife- a hunter for a good friend. After about 10 similar knives we moved onto kitchen blades and never looked back. There is the odd holiday project that doesn't belong in a kitchen - this is a hunter/ utility for my cousin who farms wild boar in Wellington. Happy Days.

Christmas Cheer! On the handle on the right, at least. Two custom Lowry Santokus. For the knife nuts, these are flat ground Elmax at 60RC, Diamondwood and G10. Lazer edge. Leather chef's wrap.
