🍗🍗Just Because this Weekend is going to be a good one with this amazing weather!! Recipe from @bbcgoodfood #slightlyaltered _________________________________________ Honey & Soy Duck _________________________________________ Ingredients 2-4 Duck Breast 2 tbsp five-spice powder ground black pepper Salt to season 1 tbsp Paprika 1 tsp Chilli powder For the sauce 4 tbsp clear honey 6 tbsp soy sauce ____________________________________________________ Instructions ____________________________________________________ Preheat the oven to 180C/350F/Gas 4. With a sharp knife, score the fat of the duck into a cross-hatch pattern. Sprinkle the five-spice powder , chilli powder and paprika onto the skin of the duck breasts and rub it into the fat well. Season with salt and freshly ground black pepper. Heat a heavy-based ovenproof frying pan. Don't add oil. Place the duck breasts skin-side down in the hot pan. Season the other side with the same spices, salt and freshly ground black pepper. Cook until most of the fat has run out into the pan and the skin has a golden colour (about three minutes). Turn the duck breasts over and cook the other side for a minute or so. Place the duck breasts in the oven for 3-5 minutes (time may be altered if you prefer well done like I did) To make the sauce, warm the honey and soy sauce together in a small pan. Bring up to boiling point and let it bubble for a minute or two to reduce. Take off the heat and allow to cool. The sauce should have a syrup-like consistency. Remove the cooked duck breasts from the oven and leave to rest in a warm place. Once rested, Slice the duck breasts into strips then drizzle over the honey and soy sauce.

Sometime in 2010 when I was back home briefly , my sister and I decided to travel to Joburg to buy a few things for a business. I remember that Wednesday evening we arrived at Road-port in Harare and because we couldn't afford to travel on those luxury coaches the likes of Greyhound and Intercape, we decided to use those old chicken buses to travel, I mean they were very cheap and after all we'd arrive in Joburg in the early hours of the morning and that's all we wanted. The journey to get out of Harare was slow because of traffic but after 30-40minutes we'd arrived paMbudzi. As we left Mbudzi that is when it occurred to us that this bus had a very strange noise and was very unstable especially on braking,the driver seemed to struggle to put the bus to a stop. Anyway It got very dark quickly and all of a sudden a very nasty storm hit us as we passed Chivhu. A massive downpour driven by very heavy winds such that at times you would feel the bus slipping and coming out of the road, and to say it was the worst journey of my life is an understatement, I did not sleep the whole journey, in fact all I did was pray and made what seemed like my last prayers.As we hit Masvingo the storm calmed and the driver began sleeping (as if the state of that horrible Masvingo road was not enough) and we almost collided with one of those huge cross border trucks at one point.My sister and I held our hearts in our hands, the silence on the bus was a definite sign that everyone was saying their last prayers as people were wide awake ,frightened to death.It was just after 6, when we finally arrived in Joburg. Up until now it is hard to calculate how we arrived in one piece.This story is a constant reminder for me that, in life, everyone of us have a journey to complete. Many a times the journeys that most of us have to travel are so hard, so challenging and disheartening. But through challenges, through uncertainties, through pain, through disappointment, through hard work that seems to amount to nothing at times....... eventually we will arrive. So long you have determination, perseverance and still willing to work hard... You Will Arrive Eventually. #unosvikachete
